I’ve only recently discovered butternut, in the sense that I’ve always avoided it for some reason, until now, that is. Perhaps my tastes are changing and I’m learning to like sweeter vegetables as I get older. Anyway, I was looking for some good butternut recipes online, and these look truly scrumptious indeed.

I cooked and ate my first butternut squash at the weekend. I used the recipe from River Cottage last week where it’s roasted and stuffed with feta and basil. It was much, much sweeter than I’d anticipated and I remain undecided about whether I actually like butternut squash or not. The feta I had wasn’t great though so it didn’t add as much of a salty taste as I had expected. Those recipes look interesting too though - boerewors sound good! As I’ve also been told butternut squash doesn’t grow very easily in Ireland it may be something that doesn’t come on to my menu very often though as it doesn’t seem likely I’ll be able to buy any local squash.

Glad you liked the boerewors & butternut combo - the sweetness of the butternut and the spicy boerewors works very well together! I also do a great butternut soup with mild curry spices that’s quite heavenly.
I like your site, btw. Lots of stuff on your “done & doing” list that I’d love to do - it’s just a little harder when you have a landlord to persuade and it involves spending his money! I was particularly interested in the Water King filter - have you noticed a difference? And is installation really as easy as their site claims? I’d love to hear your views.

Moonwaves, I completely get what you’re saying about not being sure whether you like how sweet it is. We were fed lots of butternut as children and I really didn’t like it. It’s also traditional in South Africa to cook carrots with honey or sugar, and I didn’t like that either!
Jeanne, thanks for stopping by. I really enjoy the recipes on your blog. I have noticed a bit of a difference with the Water King, but it hasn’t completely got rid of the scale. The scale there is doesn’t seem to stick as much as it used to though.

I made the Boerewors and Butternut Risotto for dinner on Monday, it was extremely good.
